Gastrology recently indulged in a seven-course vegan feast with matched beverages at The Vincent, one of Albert Park’s historic hotels. The dinner was led by a group of 7 chefs from around Melbourne, who each developed and presented one course. The evening's menu was inspired by the classic tale, The Jungle Book.
The chefs – Christian Abbott, Dylan Kemp, Tim Fowler, Abby MacGillivray, Pierre Guyot, Nicholas Hollands and Jake Furst took us on a delightful culinary journey with enticing food that drew influences from around the world.
We loved each course which included stunning dishes like roasted capsicum gazpacho with salt baked eggplant and chlorophyll; a curry of coconut, corn, squash, eggplant, peanut and chilli; miso eggplant with sesame crackers and pickled daikon; and a vegan dessert tart with berries, bark and cheesecake.
