Champagne degustation dinner at FOMO

FOMO Wine Bar Restaurant hosted a stunning Champagne Degustation Dinner last night with guest chef Matthew Moffatt. The evening featured five courses with paired Le Brun de Neuville champagnes.

A new wine bar and restaurant located within a contemporary, riverside art space, Lorimer Galley at Yarra’s Edge, FOMO provided the perfect backdrop for the dinner with incredible views over the harbour.

The dinner commenced with a couple of canapes - Chicken parfait, smoked cherries, maple; and Snapper crudo, wild scampi caviar, samphire, both matched with the champagne house's Blanc de Blancs.

A delightful dish of octopus followed. The octopus was wonderfully tender and was served alongside refreshing granny smith granita and luxurious avocado and buttermilk. This was accompanied by the Le Brun de Neuville Authentique Assemblage.

The dish of salmon was similarly delicious - A Japanese influenced dish served with crisp kohlrabi, creamy goats curd, and peas. This one was paired with the Le Brun de Neuville Authentique

Our favourite dish (and favourite champagne) graced us next. The dish of lamb, eggplant, raspberry and yoghurt was simply delicious. The lamb was cooked to perfection - tender and pink in the middle. Named after the king who created the French monarchy, The Lady de N. Clovis boasted a richness from the pinot noir and had a creamy aftertaste.

Our evening concluded on a sweet note with white chocolate, wild berries paired with the Cuvée Tendre.
