Domaine Sigalas

A visit to Domaine Sigalas is a special experience. There is so much history and tradition steeped within their four walls and there is so much to learn – from the latest developments in the production of wine to the particularities characteristics of the Santorini terroir.

For us, there was no better way to get acquainted with Domaine Sigalas than with the degustation menu which featured 6 stunning courses, created by Domaine Sigalas’ talented chef. We loved that the menu was based on Santorini’s local produce and even showcases fresh fish supplied daily by their very own fishmonger.

Each course was harmoniously accompanied by six of the winery’s special wines.

A knowledgeable staff member takes you through each course and wine pairing whilst informing you about their characteristics and how these wines were chosen for their quality, distinctiveness and compatibility with each dish.

The food was simply put, utterly delicious. Highlights included the flavour explosive fish soup to start which boasted anise flavours and paired with the fruit forward Aidani. The butter risotto was another stunner and went beautifully with the minerally Santorini 2016.

We loved learning about the varieties of grapes, vineyards and the production process of wine and also the interesting kourloura method of planting vines in Santorini. It was also interesting to hear that due to the volcanic soil, philoxthra never had an impact on Santorini’s wines so there are many preserved ancient varieties and well preserved vines to be found.

There is also so much that makes Domaine Sigalas unique. In addition to the quality and care taken, Domaine Sigalas’ founder was also the one to have rediscovered the ancient varietal mavrotragano and started planting the grape 20 years ago despite heavy criticism. Today this grape is an iconic Santorini red wine varietal and the critics have certainly been silenced.
