GLO Gelato, a vibrant and modern gelateria and cake shop, is injecting the precinct with a bold sense of fun, flavour and flair—starting with its gelato.
At the heart of GLO’s offering is a carefully curated selection of 12 core gelato flavours and four rotating specials. But this isn’t your average scoop shop. Every flavour is made in-house from the ground up—think real fruit jams, house-made sauces, crunchy brittles, pudding chunks, crumbles and more—all crafted for maximum texture and taste. Even the gelato base is pasteurised with the key flavour ingredients to ensure the result is rich, smooth and deeply infused.
Expect nostalgia-inducing combinations with a gourmet twist. There’s Yogi Bear, made with tangy Greek yoghurt and wild organic blueberry jam, and Icky Sticky, where freshly popped popcorn is blended into the base, swirled with sticky date pudding and salted caramel. The Strawberry Short Cake, inspired by a family recipe, is a crowd favourite. Every scoop is loud, loaded, and seriously satisfying.
Beyond gelato, GLO is serving up next-level desserts that are perfect for Melbourne’s chillier months. The Hot Custard Crumble is a winter warmer worth braving the cold for—layers of hot apple pie filling, creamy Italian custard and a generous topping of GLO’s house-made crumble, finished with a scoop of fior di latte gelato. It’s everything you want from a comforting dessert: sweet, hot, cold, creamy and crunchy.
Then there’s the donut cake—GLO’s playful answer to the classic celebration cake. Is it a donut? Is it a cake? Is it gelato? It’s none of the above. GLO Gelato is the latest venture from hospitality veterans Alfredo and Angelo Mercuri and Danielle Miller—the powerhouse family team also behind Carlton institution Universal Restaurant and organic meal delivery brand Wilding Foods. With international gelato training and a passion for quality and sustainability, they’ve created a gelateria that’s both rooted in tradition and wildly creative.
