Seared tuna and ocean trout, micro herb salad
This dish was well executed. The tuna and trout were both beautiful and beautifully prepared.
Seared scallops, crumbed aged jamon and pea puree
The scallops were perfectly seared and bursting with natural flavour, a flavour further enhanced by the subtle sweetness of the pea puree.
Eye fillet - 289 grams, porcini and white truffle mascarpone, roasted kipfler potato
Topped with heavenly white truffle mascarpone, the delicious piece of perfectly cooked eye fillet was delicious. A light searing ensured that it was lined with a thin crisp layer packed with caramelised beef flavour. The meat was intense with characteristic beefy notes and a deep earthy richness. Texturally, the beef was sublime with a decadent melt in the mouth, almost buttery, consistency. Coated with an earthy braising sauce, the dish was very enjoyable to consume and was the dish of the night.
Fish of the day
The quality of the snapper was exemplary. The skin of the fish was perfectly seared to be very crisp while the flesh was delicate and moist. It was a wonderfully simple dish that allowed the natural subtle sweetness of the fish to be enjoyed.
Chocolate nemesis, berry coulis and salted caramel ice cream
The quenelles of chocolate mousse were well made and exquisitely rich with the berry coulis and salted caramel ice cream cutting through the richness harmoniously. A dessert that would delight any chocolate lover.
Mango jelly, coconut foam, star anise gel
The Mango jelly, coconut foam, star anise gel was wonderfully light. A texturally perfect rendition, the coconut foam melted in our mouths.
