Bluestone American Barbecue

Sitting unassumingly at the heart of Coburg on Sydney Road, Bluestone impresses with hearty and generous American BBQ dishes that provide diners with a unique spin on low and slow traditions from the US BBQ belt.

Chef Alvaro Malel draws inspiration from his Uruguayan heritage, and his passion for cuisines from both American continents to reimagine smoked classics like Yearling Beef Short rib with chimichurri, and the Cuban style pulled pork with lime mojo. Like the best of all these traditions, generously sized dishes are designed to be shared, banquet style, with friends, family and colleagues.

We loved tasting our way through Bluestone’s menu with the Pitmaster’s Pick 3 option – it’s like a banquet menu and yes, expect an absolute feast as it comes with: Crispy pork belly, pork spare ribs, Southern fried chicken, Texas style brisket, Cuban style pulled pork, Applewood chicken chops, Pit braised pulled lamb, Smoked cheddar sausage, Tangy creole slaw, Fire roasted red peppers, Stone ground grits, BBQ street corn, Deep fried mac and cheese and Coral leaf salad. It’s a lot and guess what? EVERYTHING is delicious.

An absolute favourite of ours was the Texas style brisket, made using certified black Angus beef, and adorned with shallots and sauce. This was particularly noteworthy for its beefy flavours which have been enhanced by ample marinating before being smoked for hours. Simply stunning.

The pork ribs were similarly stunning - Tender, falling off the bone, juicy and packed with flavour. The Applewood chicken chops were yet another highlight. Flavoured with a proprietary blend of mild spices herbs and spices, the chicken was superbly cooked. A memorable dish combining flawless texture with equally superlative flavours.

The side dishes continued to please. If you love your Mac and Cheese you won’t be able to go past Bluestone’s cheeky twist on the mac and cheese which turns them into deep fried nuggets of sheer pleasure.

Our visit to Bluestone concluded on a sweet note with their moreish pecan pie. Making wonderful use of America’s native nut, the dessert was all about those delicious nuts and was served with a decadent scoop of ice cream for contrast. We loved the rich crumbliness and complementary nuttiness of the pastry which perfectly contrasted its gooey richness.
