An Unhurried Christmas: A Glengoyne Whisky and Dining Experience at Cutler & Co.

This November, one of Melbourne’s most celebrated restaurants, Cutler & Co., is set to host a whisky experience unlike any other. In partnership with Glengoyne, the renowned Highland distillery celebrated for doing things “the right way — the long way,” Cutler invites guests to slow down, savour, and embrace An Unhurried Christmas — an exclusive whisky and dining experience led by Glengoyne’s Global Brand Ambassador, Gordon Dundas.

For one night only, on Wednesday, 19 November 2025, the Fitzroy institution will transform its private dining room into an intimate whisky haven. Guests will be guided through a carefully curated tasting of Glengoyne’s most distinguished single malts — including the 12 Year Old, Cask Strength, and the showstopping 21 Year Old — each chosen to reveal the craftsmanship, patience and character that define the distillery’s signature style.

The evening begins with a Honey Bee cocktail, a bright and refreshing mix of Glengoyne 10 Year Old, lemon, honey and ginger ale, setting the tone for a night of flavour and storytelling. From there, attendees will enjoy a multi-course menu crafted by the Cutler kitchen — each dish designed to complement the whiskies’ distinct profiles. Expect refined pairings such as Foie Gras Parfait Tart with Golden Raisin and Pistachio, Wood-Grilled Beef Rib with Pickled Shallot and Wasabi Leaf, and Abrolhos Island Scallop with Montpellier Butter, followed by Sablé Breton Tart with raspberry and crème diplomate and handcrafted chocolate truffles to finish.

At the heart of the experience is Gordon Dundas — an internationally recognised whisky expert known for his engaging, story-rich masterclasses. His deep knowledge of cask influence, maturation and flavour balance will take guests behind the scenes of one of Scotland’s most admired distilleries, offering an insider’s view of how time and patience can shape perfection in a glass.
