Tommy Collins presents Tonto

Last night, highly regarded “Chef Tonto” (Tim Yates), former Head Chef of London’s Scully St James’s, partnered with renowned caterers Tommy Collins and their Head Chef, Paul Turner for an exclusive dinner event at St Kilda’s The Postina.

The dinner comprised of six courses, split between the two chefs. Each dish was a representative of the chef’s signature style, along with their passions, backgrounds and knowledge. The menu featured dishes such as kefir roast beetroot with peanut chilli miso + caramelised cauliflower coconut, aged tuna with roasted beef fat, basil + fried rye and more.

Alongside each course, guests delighted in a paired cocktail, and a short chef Q&A also took place at the end of the evening.

Leaders in Australia’s events and catering scene, Tommy Collins are the hospitality gurus behind major events including MRC at Caulfield Cup and Twilight Beach and Portsea Polo’s.

New Head Chef Paul Turner joins Tommy Collins from Windsor’s Lover restaurant where he headed the restaurant for over four years, with prior roles at Two Wrongs and Cutler & Co.

It was a decadent night of exceptional food with delicious drinks and great vibes.
