Maverick, Rebel, X-treme. Chef-Founder Alvin Leung is known for being all the above, made famous by three Michelin-starred Bo Innovation in Hong Kong.

Now, leave aside the molecular dining and discover another side of his culinary talent as he unveils 15 Stamford by Alvin Leung at The Capitol Kempinski Hotel Singapore. The modern restaurant showcases an interesting array of his favourite recipes in Asia, paying humble tribute to different cuisines from Korea, the Philippines, Thailand, Malaysia, Hong Kong to Singapore.

We loved tasting our way through the delicious menu. Chef Leung’s philosophy at 15 Stamford by Alvin Leung was honed over many years as he walked through Asia to understand each country’s culinary nuances. 

Highlights included the Snow Fish with smoked chilli mackerel, charred artichoke, ginger flower and tamarind emulsion is a glorious plate that takes inspiration from the beloved Malaysian assam laksa dish. Brimming with the most perfectly cooked snow fish, this luxe dish offers savoury decadence.

The Japanese inspired Ebi Shrimp dish is another notable dish with heady smoked orange gel, tomato spiced broth, turnip kelp and seaweed dust. 

The Indonesian and Malaysian-inspired Black Angus Beef Short Rib served with Nyonya Daiko achar, desiccated coconut and shallot and gula java rendang sauce was perhaps our favourite.  Every bit as robust as the original stew, the dish features melt in your mouth beef chunks in rendang marinate around spools of thick noodles that can be slurped to your hearts content.
