The culinary ethos here mirrors Akira Back’s own story—infusing Japanese and Korean influences with global inspirations, all while using only the highest-quality ingredients. That philosophy is immediately apparent in the Tuna "Pizza"—a dish so iconic it has a loyal following around the world.
