The hotly anticipated launch of the designer hotel QT Melbourne has brought four vibrant additions to the city’s famed hospitality scene: Pascale Bar & Grill; The Cake Shop; and Hot Sauce Laneway Bar.

QT Hotels & Resorts first put its stamp on the Australian tourism sector with the launch of QT Gold Coast in 2011. In it's renowned style, QT Melbourne is yet another unique and exciting property delivering signature designer spaces - bold intriguing yet relaxing. 

We enjoyed visiting the hotel's flagship restaurant, Pascale Bar & Grill. Designed to pay homage to the ‘Paris-end’ of Collins Street, the eatery boasts bold industrial chic and emphasis on high-fashion.

An all-day affair, Pascale Bar & Grill allows guests to indulge in an expansive, French-infused, Euro bistro inspired menu designed by QT Melbourne’s Executive Chef Paul Easson (QT Sydney’s Gowings Bar & Grill, Rockpool Bar & Grill Melbourne) in collaboration with QT Hotels Creative
Food Director, Robert Marchetti, to satisfy and intrigue foodies.

Thoughtfully designed, the open bustling kitchen will offer a glimpse into the creation of the dishes. The wood-fired ovens and tempting glass encased display playing host to the Madame of all patisseries.

Produce grown in QT Melbourne’s rooftop garden features on the menu alongside locally sourced ingredients selected by the QT Forager, Georgie Neale, ensuring quality and freshness for Executive Chef Paul Easson and his team’s artisan flair.

We recommend the Pascale's Poke - Bursting at the seams with umami, this was one of the best renditions of the poke we've had. Freshly diced Ocean Trout, Tiger Flathead gently mixed with shiso, sweet soy, crunchy rice Bubbles
and heady wasabi rice before being finished with dollops of avocado mousse. 

For mains the Jonnies Sichuan Fried Duck goes down a treat. Lots of fun (you wrap it up yourself) and full of flavour - Think beautifully crispy cassia spiced duck served with Spring Onions, super addictive house hot sauce, orange-kecap manis and steamed bao. 

To finish, the already famous Napoléon Blanky dessert (which comprises of a tart raspberry sheet over mille-feuille) tastes as good as it looks. Creamy custard intertwined amongst the crumbliest of pastries with the raspberry sheet just the right amount of tartness to cut through the rich custard.
