The restaurant has launched a completely reimagined menu, celebrating local produce and sophisticated flavour pairings. Executive Chef and his team have crafted dishes that are as visually striking as they are flavourful, each plate telling its own story through thoughtful combinations of texture, colour and technique.
The Smoked Wimmera Duck Breast is an opening act to remember—beautifully tender and paired with pickled cherry gel, nasturtium emulsion and puffed quinoa. It’s a dish that balances rich smokiness with bright, playful acidity.
Seafood lovers will delight in the Ravioli di Pesce, featuring Tasmanian salmon and prawns enveloped in delicate pasta, served with a luscious shellfish butter sauce and herb gremolata. For something equally indulgent, the Tasmanian Salmon is a masterclass in precision: teriyaki-glazed and served with cauliflower, black garlic, pickled radish and snow pea—a harmony of umami and freshness.
Meat aficionados won’t want to miss the Lamb Back Strap, showcasing tender Bass Coast lamb complemented by sweet potato, courgette, a rich jus, and a standout date and olive jam that ties everything together with a hint of sweetness and depth.
Dessert at Windows is a show in itself. The Pickled Berry Cloud Cake is a whimsical yet elegant finale—vanilla chiffon layered with strawberry mousse, mascarpone, pickled strawberry, lychee popping pearls, quandong ice cream and a salted macadamia crumble. Meanwhile, the Blue Moon Plum is a vision of modern dessert design, featuring a creamy blueberry mousse dome with a Davidson plum curd insert, blueberry-lavender coulis, sesame tuile and lemon myrtle cream.
